2 lbs. large shrimp, head off, shells on, cut down the back and remove vein.
2 tsp. cornstarch 1 tb. white wine 1 1/2 tsp. salt 1/2 onion sliced thin 1 tb. minced ginger 4 tb. ketchup 1 tb. hoisin sauce 1 tb. sugar marinate shrimp in cornstarch, sherry and salt for 1/2 hour. heat oil, add onion, cook and stir 1 minute. add ginger, cook and stir 1 minute. add shrimp, cook and stir 2 minutes. add ketchup, sugar, hoisin sauce, water, stir together, cover and cook for 3 minutes until shrimp are done. top with green onion and cilantro and serve with rice. marinate stew meat for 30 minutes with:
1 t. 5 spice powder 1 tb. lemon grass 3 tb. fish sauce 3 tb. chopped ginger 2 tb. brown sugar 1 bay leaf high heat, brown meat, remove reduce heat and cook 1 medium onion for 5 minutes add 1 chopped tomato and cook for 15 minutes add back the beef and 2 star anise add 3 cups water or beef broth splash sherry or white wine 3 tb. soy sauce bring to boil, then reduce heat and simmer for 1 hour. add chunked carrots and potatoes simmer for 45 minutes. if i have it, i add bok choy. serve as a soup over wide rice noodles with fresh basil and cilantro and hot sauce.
